How It Works
- Beginning Liquor Inventory: Dollar value of bar inventory at the start of the period.
- Liquor Purchases: Everything you bought for the bar during the period.
- Ending Liquor Inventory: Dollar value of liquor on hand at the end of the period.
- Liquor Usage / COGS: What you actually poured or lost during the period.
- Pour Cost %: Liquor cost as a percentage of liquor sales (lower is better, within concept ranges).
